Fresh tagliolini pasta tossed with vongole—the tiny sweet and briny clams from the coastal waters of the Mediterranean—a touch of white wine, olive oil, and red pepper flakes; thick slices of sun-ripened tomatoes adorned with arugula; grilled bread… all washed down with a crisp and dry Vermentino from the hills of Liguria. <image:title>Recipes - Spanish Style Cocido with Cod, Shrimp, and Chorizo - There isn’t a particular region or specific area in Spain where this dish is from—this is more about the seasonings that are emblematic to Spanish cooking. Many of the ingredients in the list make for wonderful food souvenirs from your visits to public markets and shops during your travels: Extra virgin olive oil, cumin, pimenton dulce, and Ñora pepper paste. No doubt every time you make this dish you’ll think about the day you purchased those ingredients! And to keep the goodness going at home you can easily find these items online at retailers like The Spanish Table or La Tienda.</image:title>

<image:title>Recipes - Shrimp, Cod, and Chorizo Tapa al Ajillo - This is an incredibly easy dish to make. What’s important with something so simple is that the quality of the ingredients needs to be very high—not because of price, but more important, for flavor. You will see there are many opportunities to deviate from this preparation, for example, using different fish and shellfish, herbs, or other seasonings. Serving steamed potatoes or saffron flavored rice on the side are wonderful additions. Putting it all together in an oven-to-table baking dish is preferable, and using a Spanish terra cotta baking dish called a cazuela will be muy auténtico!</image:title>

<image:title>Recipes - Catalan Picada - Somewhat similar to Genovese pesto but used differently this sublime condiment from the Cataluña region of Spain can be stirred into soups, stews, braises, and bean dishes just before serving. It adds a very satisfying layer of flavor and slightly thickens whatever it’s added to. This is a base recipe that is wonderful as is but can be modified with other seasonings such as hints of cinnamon, lemon zest, marjoram, or even unsweetened cocoa. You can also take this to another level by using Spanish oil made from Arbequina olives and raw Marcona almonds.</image:title>

<image:title>Recipes - Porcini Mayonnaise - At the wonderful food store Gastronomia Peck in Milan, a signature garnish on their elaborate prepared seafood platters is a dollop of mayonnaise on a scampi tail or shrimp topped with a small, preserved porcini mushroom. This elegant combination is the inspiration for this very satisfying accompaniment to baked, grilled, or poached fish and seafood. Instead of using mayonnaise try this in shrimp, crab, or lobster salads. And for land-based occasions have it in sandwiches with cold roasted meats, turkey, or chicken salads.</image:title>

<image:title>Recipes - Madame Quillier’s Rouille - Madame Quillier was the owner of a cookware store near the public market in the old town section of Antibes, France. Since the private yacht I worked on was based in Antibes much of what I purchased for the galley was from her shop. When I bought a mortar and pestle Madame gave me this recipe and said the mortar was the perfect tool to use for making it. Typically rouille is spread on a small crouton then topped with grated Gruyere cheese as an accompaniment for Provençal fish soup. But it is equally delicious with baked, grilled, or griddled fish, shellfish, and even lamb or chicken. Don’t worry about using a mortar and pestle—a food processor works just fine.</image:title>

<image:title>Recipes - Spreadable Tuna Mousse - If I could bring something to the world of gastronomy, this would be my first entry. It is imperative to use a good quality oil-packed tuna when you make this. Since there isn’t a standard for retail tuna packing, the recipe calls for the drained weight. Please start with the quantities of ingredients. However, due to variations, have a little more lemon juice, balsamic vinegar, and soy sauce to make adjustments. The result wants to be a tame tuna flavor with balanced hints of acidity, salt (from the soy sauce), a hint of balsamic vinegar, and a little creaminess from the butter.</image:title>

<image:title>Recipes - Linguine with Clams and Zucchini - A popular and classic primo of the Amalfi Coast, this recipe is an adaptation from Ristorante Lo Scoglio in Marina del Cantone. One of the servers at the restaurant gave me a tip for success when making this— the seemingly overcooked zucchini in the method makes for very flavorful oil in which to cook the clams. And a shopkeeper in Sorrento offered it’s always better to use a flat pasta like linguine so the sauce or condiments adhere to the pasta instead of using a round shape like spaghetti.</image:title>

<image:title>Recipes - Baked Cherry Pudding - From the Limousin area of central France, Clafoutis is very easy to make. Find cherries that are large and firm with a nice balance of sweet and tart. Wash and pit the fruit. Make a batter. Bake both together. Dust with powdered sugar. Serve with crème fraiche or sour cream on the side. That’s it. Remember for success this kind of simplicity is reliant on the quality of the ingredients. You can also use apricots. Cut them in half, remove the stone, and arrange cut side up in the baking dish.</image:title>

<image:title>Perspectives - Mediterranean Summer Cooking - “The American housewife— man or woman— is potentially the best of all possible cooks; for even in times of scarcity she has in shameful abundance all the necessary ingredients. She lives in a veritable paradise of flesh, fish, and fowl; of fruit, vegetables, and dairy products; while the great transoceanic liners bring to her market all the condiments and ingredients not indigenous to the region in which she lives. All she needs is the will to take advantage of her opportunities. For the increased joy of her precious brood, may she do so with all speed.”</image:title>
